The 2025 Taste the Atlantic Young Chef Ambassador Programme was a tremendous success, thanks to the dedication of our talented young chefs and the unwavering support of our passionate seafood producers, who generously shared their knowledge and expertise throughout the journey.
This year’s seafood adventure began in Westport, where our ambassadors had the opportunity to visit Keem Bay Smoked Fish, Croagh Patrick Seafood, and Killary Fjord Shellfish.
Next, the journey took us to County Cork, where the chefs learned about lobster v-notching, toured Glenmar Seafoods, and participated in a fish filleting course led by Master Fishmonger Hal Dawson.
A special thank you to Achill Oysters, Kelly’s Oysters, Burren Smokehouse, and Goatsbridge Trout, all of whom dedicated their time to host one-on-one mentoring days with our chefs—an invaluable part of their development.
The programme culminated in Galway with a truly memorable finale hosted by renowned chef JP McMahon. The day included a foraging trip, followed by an inspiring masterclass in his kitchens at Aniar.
